Ingredients
Instructions
-
Cook the soba noodlesBring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually 4-5 minutes. Do not overcook as they can become mushy. Drain immediately and rinse under cold running water to stop the cooking process and remove excess starch.
-
Prepare the sesame dressingIn a small bowl, whisk together the rice vinegar, soy sauce, honey, toasted sesame oil, vegetable oil, and grated ginger until well combined and the honey is fully dissolved.
-
Prepare the vegetablesJulienne the carrot and cucumber, thinly slice the red bell pepper, and slice the green onions. Place all prepared vegetables in a large mixing bowl.
-
Combine the saladAdd the cooled soba noodles to the bowl with the vegetables. Pour the sesame dressing over the noodles and vegetables. Toss gently to combine, ensuring the noodles and vegetables are evenly coated with the dressing.
-
Garnish and serveTransfer the noodle salad to a serving platter or individual bowls. Sprinkle with toasted sesame seeds and nori strips if using. The salad can be served immediately or chilled for 30 minutes to allow the flavors to meld.
