  1. Prepare the mushrooms
    Preheat the oven to 425°F (220°C). Clean the mushrooms with a damp paper towel, removing any dirt. Trim the stems if needed and cut larger mushrooms in half, leaving smaller ones whole. Pat dry thoroughly.
  2. Make the sesame marinade
    In a large bowl, whisk together the sesame oil, soy sauce, rice vinegar, maple syrup, minced garlic, grated ginger, 2 tablespoons of sesame seeds, red pepper flakes (if using), and salt until well combined.
  3. Coat the mushrooms
    Add the prepared mushrooms to the bowl with the marinade and toss gently until all mushrooms are evenly coated. Let them marinate for at least 10 minutes, tossing occasionally to ensure even absorption.
  4. Arrange for roasting
    Spread the marinated mushrooms in a single layer on a large rimmed baking sheet lined with parchment paper. Make sure they're not overcrowded to ensure proper roasting. Pour any remaining marinade over the mushrooms.
  5. Roast to perfection
    Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are golden brown, slightly crispy on the edges, and have released most of their moisture.
  6. Add final touches
    Remove from the oven and immediately sprinkle with the remaining tablespoon of sesame seeds while the mushrooms are still hot. Allow to cool slightly on the baking sheet for 3-5 minutes.
  7. Serve and garnish
    Transfer the roasted mushrooms to a serving dish. Garnish with sliced green onions and chopped cilantro if using. Serve immediately while warm as a side dish, appetizer, or topping for rice bowls.
