
Sesame Peanut Noodles
Creamy, nutty noodles with a perfect balance of sweet and savory

Cook the noodlesBring a large pot of salted water to a boil. Cook the noodles according to package directions until al dente, usually 7-9 minutes. Drain and rinse under cold water to stop the cooking process.

Prepare the sauceIn a medium bowl, whisk together the peanut butter, sesame oil, soy sauce, rice vinegar, honey, ginger, garlic, and sriracha until smooth. Add water a tablespoon at a time until the sauce reaches your desired consistency - it should be pourable but still thick enough to coat the noodles.

Prepare the vegetablesWhile the noodles are cooking, julienne the cucumber and carrot. Slice the green onions diagonally, separating the white and green parts. Toast the sesame seeds in a dry pan over medium heat for 3-4 minutes until golden and fragrant, shaking the pan occasionally.

Toss everything togetherIn a large bowl, combine the cooled noodles with about 3/4 of the sauce. Toss well to coat every strand. Add more sauce if needed - the noodles will absorb some of the sauce as they sit.

Add the vegetablesAdd the julienned cucumber, carrot, and the white parts of the green onions to the noodles. Toss gently to combine, being careful not to break the noodles.

Serve and garnishDivide the noodles among serving bowls. Drizzle with any remaining sauce. Sprinkle with the green parts of the green onions, toasted sesame seeds, and optional cilantro or Thai basil. Serve immediately for a warm dish, or refrigerate for up to 2 hours for a chilled version.
