  1. Prepare the Brussels sprouts
    Preheat oven to 425°F (220°C). Trim the ends off the Brussels sprouts and remove any discolored outer leaves. Cut them in half lengthwise. Place in a large bowl.
  2. Season the sprouts
    In a small bowl, whisk together olive oil, 1 tablespoon of sesame oil, and salt. Pour over Brussels sprouts and toss until evenly coated. Spread Brussels sprouts in a single layer on a large baking sheet, cut side down for maximum caramelization.
  3. Roast to perfection
    Roast in the preheated oven for 20-25 minutes, stirring halfway through, until Brussels sprouts are tender on the inside and crispy and caramelized on the outside.
  4. Prepare the sesame ginger sauce
    While the Brussels sprouts are roasting, make the sauce by combining soy sauce, rice vinegar, honey, grated ginger, minced garlic, sriracha (if using), and the remaining tablespoon of sesame oil in a small bowl. Whisk until well combined.
  5. Toss with sauce
    When the Brussels sprouts are done roasting, transfer them to a large bowl. Pour the sesame ginger sauce over the hot Brussels sprouts and toss to coat evenly. Add 1 tablespoon of sesame seeds and toss again.
  6. Garnish and serve
    Transfer the Brussels sprouts to a serving dish. Garnish with the remaining sesame seeds and sliced green onions. Serve immediately while hot and crispy for the best flavor and texture.
