  1. Caramelize the onions
    In a large skillet over medium heat, melt the butter. Add the sliced onions and brown sugar, stirring to coat. Cook for 15-20 minutes, stirring occasionally, until the onions are deeply caramelized and golden brown. Season with salt and pepper to taste.
  2. Prepare the cream cheese
    In a small bowl, combine the softened cream cheese with diced jalapeño (if using) and mix until smooth. Set aside at room temperature to keep it spreadable.
  3. Cook the hot dogs
    Heat olive oil in a skillet over medium-high heat. Add the hot dogs and cook until browned on all sides and heated through, about 5-7 minutes. Alternatively, grill the hot dogs for 5-6 minutes, turning occasionally until charred to your liking.
  4. Toast the buns
    Lightly toast the hot dog buns in a toaster, under a broiler, or on the grill for about 30 seconds until just warmed and slightly crisp on the edges.
  5. Assemble the Seattle dogs
    Spread a generous layer of cream cheese on the inside of each toasted bun. Place a hot dog in each bun, then top with caramelized onions. Add sauerkraut if using, and finish with a drizzle of sriracha or hot sauce if desired.
  6. Serve immediately
    Wrap each hot dog in parchment paper or serve on plates. The Seattle-style hot dog is best enjoyed while still warm with all the toppings melding together.
