
Seafood Pho
Fragrant Vietnamese seafood noodle soup with aromatic broth

Prepare the brothIn a large pot, add seafood stock, charred onion, sliced ginger, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 30 minutes to allow flavors to infuse.

Season the brothStrain the broth to remove solids. Return to pot and add fish sauce and sugar. Taste and adjust seasoning if needed. Keep at a gentle simmer.

Cook the noodlesPrepare rice noodles according to package directions, usually soaking in hot water for 8-10 minutes until soft but still slightly firm. Drain and rinse with cold water to prevent sticking.

Cook the seafoodAdd the prepared seafood to the simmering broth. Cook just until done - shrimp should be pink and curled (2-3 minutes), fish should be opaque (3-4 minutes), and shellfish should open (4-5 minutes). Be careful not to overcook.

Assemble the phoDivide the cooked noodles among four large soup bowls. Ladle the hot broth and seafood over the noodles.

Add garnishesArrange bean sprouts, fresh herbs, lime wedges, and sliced chilies on a separate plate. Let each person add garnishes to their bowl according to taste.
