Indian-Italian fusion with spinach, paneer and spiced tomato sauce

Prepare the doughPreheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface into a 12-inch circle. Transfer to a pizza stone or baking sheet.

Make the spiced tomato sauceIn a small bowl, mix the tomato sauce with 1/2 teaspoon garam masala, 1/4 teaspoon cumin, and 1/4 teaspoon ground coriander. Spread this evenly over the pizza dough, leaving a 1/2-inch border for the crust.

Prepare the saag (spinach)Heat olive oil in a large skillet over medium heat. Add garlic and ginger, sautéing for 30 seconds until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Season with remaining garam masala, cumin, coriander, and cayenne pepper. Stir well and cook for another minute.

Assemble the pizzaSprinkle half the mozzarella over the spiced tomato sauce. Distribute the spinach mixture evenly over the cheese. Arrange paneer cubes and red onion slices on top. Finish with the remaining mozzarella cheese.

Bake the pizzaDrizzle the pizza with a little olive oil and bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.

Garnish and serveRemove the pizza from the oven and let it cool for 2 minutes. Sprinkle with fresh cilantro leaves before slicing and serving hot.
