Prepare the basePreheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Roll out the pizza dough on a floured surface to about 12-14 inches in diameter. Transfer to a pizza peel or baking sheet lined with parchment paper.

Make the vindaloo sauceIn a small bowl, mix 1 tablespoon olive oil with the vindaloo curry paste and tomato sauce until well combined. Spread this mixture evenly over the pizza dough, leaving about 1/2 inch around the edges for the crust.

Prepare the vegetablesIn a medium bowl, toss the cauliflower florets, par-boiled potato slices, bell pepper, and red onion with the remaining tablespoon of olive oil. Season with a pinch of salt.

Assemble the pizzaSprinkle half of the mozzarella cheese over the sauce. Arrange the seasoned vegetables evenly over the cheese. Top with the remaining mozzarella and the crumbled paneer cheese.
