Add the wine and reducePour in the red wine, increase the heat to medium-high, and bring to a simmer. Allow the wine to reduce by half, about 10-12 minutes. This concentrates the flavor and evaporates the alcohol.

Incorporate remaining ingredientsAdd the beef stock, thyme sprigs, bay leaf, tomato paste, and black pepper. Stir to combine and bring back to a simmer. Continue to cook, reducing the liquid by about two-thirds until it reaches a slightly syrupy consistency, about 10-15 minutes.

Strain and seasonRemove the thyme sprigs and bay leaf. For a smoother sauce, strain the reduction through a fine-mesh sieve into a clean saucepan, pressing on the solids to extract maximum flavor. Return to low heat and season with salt to taste.

Finish the sauceStir in the balsamic vinegar for brightness. If using flour for a thicker sauce, mix it with the remaining tablespoon of butter to form a paste (beurre manié), then whisk small amounts into the sauce until desired consistency is reached. Finally, swirl in the remaining butter off heat to add richness and shine (monte au beurre).
