Sauté the aromaticsIn a medium saucepan over medium heat, sauté the minced shallots until translucent, about 3-4 minutes. Add the garlic and continue cooking for another 30 seconds until fragrant, being careful not to burn.

Add the port winePour in the port wine and increase the heat to medium-high. Add the thyme sprigs and bay leaf. Bring to a gentle boil and let it reduce by half, about 10-12 minutes. The alcohol will cook off and the sauce will begin to thicken.

Incorporate remaining liquidsAdd the balsamic vinegar and beef stock. Continue to simmer until the sauce is reduced by half again and has a syrupy consistency, about 8-10 minutes. The sauce should coat the back of a spoon.

Strain and finish the sauceRemove the thyme sprigs and bay leaf. Strain the sauce through a fine-mesh sieve into a clean saucepan to remove the shallots and garlic pieces, pressing gently to extract all the flavor.

Mount with butterReturn the strained sauce to low heat. Add the cold butter cubes one at a time, whisking constantly until each piece is fully incorporated before adding the next. This process, called 'mounting,' gives the sauce a glossy finish and velvety texture.

Season and serveAdd honey or brown sugar if desired for additional sweetness. Season with freshly ground black pepper. Taste and adjust seasonings if necessary. Serve immediately drizzled over steak, lamb, duck, or other rich meats.
