  1. Reduce the wine mixture
    In a medium saucepan over medium heat, combine the white wine, white wine vinegar, and minced shallots. Bring to a simmer and cook until the liquid has reduced to about 2 tablespoons, approximately 8-10 minutes.
  2. Add cream (optional)
    If using, add the heavy cream to the reduction and simmer for 1 minute. The cream helps stabilize the sauce, making it less likely to separate.
  3. Incorporate the butter
    Reduce heat to low. Add the cold butter cubes one at a time, whisking constantly. Allow each piece to melt almost completely before adding the next. The sauce should gradually thicken and become smooth and glossy. Be careful not to let the sauce boil once the butter is added, as this will cause it to separate.
  4. Add final flavorings
    Once all butter is incorporated, remove the pan from heat. Stir in the lemon juice, chopped herbs, salt, white pepper, and cayenne (if using). Taste and adjust seasoning if necessary.
  5. Strain and serve
    For an ultra-smooth sauce, strain through a fine-mesh sieve to remove the shallot pieces. Serve immediately over fish, seafood, chicken, or vegetables. The sauce doesn't hold well for long periods as it may separate when cooled.
