  1. Prepare the vegetables
    Preheat oven to 200°C (400°F). Place the sliced eggplant, zucchini, and bell peppers on baking sheets. Drizzle with 2 tablespoons of olive oil, season with salt, pepper, and half the herbes de Provence. Roast for 15-20 minutes until softened but not fully cooked. Allow to cool slightly.
  2. Sauté the onions
    While vegetables are roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook until softened and beginning to caramelize, about 10-12 minutes. Add the minced garlic and cook for 1 minute more. Remove from heat and set aside.
  3. Prepare the pastry
    Line a 9-inch tart pan with removable bottom with the puff pastry sheet, pressing it into the corners and trimming any excess. Prick the bottom several times with a fork. Refrigerate for 15 minutes.
  4. Assemble the tart
    Spread the caramelized onions and garlic mixture evenly over the bottom of the chilled pastry. Crumble half of the goat cheese over the onions. Arrange the roasted vegetables and tomato slices in overlapping circular patterns over the cheese layer, alternating vegetables for a colorful presentation.
  5. Add final touches
    Crumble the remaining goat cheese over the vegetables. Sprinkle with thyme leaves and the remaining herbes de Provence. Season with salt and pepper. Brush the exposed pastry edges with beaten egg.
  6. Bake the tart
    Bake in the preheated oven for 35-40 minutes, until the pastry is golden brown and the vegetables are tender. If the edges brown too quickly, cover them with aluminum foil.
  7. Rest and serve
    Allow the tart to cool for 10 minutes before removing from the pan. Garnish with additional fresh thyme leaves and a light drizzle of olive oil. Serve warm or at room temperature, sliced into wedges.
