  1. Prepare the broth
    In a large pot, combine chicken and pork broths, soy sauce, mirin, sesame oil, garlic, and ginger. Bring to a boil, then reduce heat and simmer for 1 hour, uncovered. Strain the broth to remove solids and return to the pot.
  2. Cook the pork belly
    Season pork belly slices with salt and pepper. In a separate pan, sear pork belly over medium-high heat until browned and crispy on the edges, about 3-4 minutes per side. Remove and slice thinly for serving.
  3. Prepare the soft-boiled eggs
    Bring a pot of water to a boil. Gently lower eggs into the boiling water and cook for exactly 6 minutes. Transfer immediately to an ice bath to stop cooking. Once cooled, peel carefully and slice in half lengthwise.
  4. Cook the vegetables
    Add the sliced mushrooms to the simmering broth and cook for 5 minutes. Add the bok choy and simmer for another 2-3 minutes until just tender but still crisp.
  5. Cook the noodles
    In a separate pot, cook the ramen noodles according to package instructions, usually 2-3 minutes. Drain well, being careful not to overcook as they will continue cooking slightly in the hot broth.
  6. Assemble the ramen bowls
    Divide the cooked noodles among four large serving bowls. Ladle the hot broth over the noodles. Arrange the sliced pork belly, halved soft-boiled eggs, bok choy, and mushrooms on top of the noodles.
  7. Add the garnishes
    Sprinkle sliced green onions over each bowl. Add strips of nori on the side of each bowl, partially submerged in the broth. Serve immediately while hot.
