Prepare the batterIn a large shallow bowl, whisk together eggs, pumpkin puree, milk, heavy cream, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until completely smooth and well combined.

Soak the breadPlace each slice of brioche in the pumpkin mixture, allowing it to soak for about 30 seconds on each side. The bread should absorb the mixture without becoming too soggy. Transfer the soaked slices to a plate or baking sheet.

Heat the panHeat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and allow it to melt, coating the cooking surface evenly.

Cook the French toastPlace 2-3 slices of the soaked bread in the skillet (do not overcrowd). Cook for 3-4 minutes on each side until golden brown and slightly crisp on the outside while soft and fluffy inside. Add more butter to the pan between batches as needed.
