Prepare the asparagusWash the asparagus spears thoroughly and trim the woody ends. Bring a large pot of salted water to a boil. Prepare an ice bath in a large bowl. Blanch the asparagus for 2 minutes until bright green and slightly tender, then immediately transfer to the ice bath to stop cooking. Once cooled, pat the asparagus dry with paper towels.

Season the asparagusIn a small bowl, mix the olive oil, lemon juice, minced garlic (if using), and half of the lemon zest. Lightly brush this mixture onto the asparagus spears, then season with salt and pepper.

Wrap with prosciuttoTake each half slice of prosciutto and wrap it diagonally around an asparagus spear, starting at the bottom and spiraling up toward the tip, leaving the tip exposed. Place the wrapped spears on a baking sheet, ensuring they don't overlap.

Broil or grillFor broiling: Preheat your broiler to high. Place the baking sheet 6 inches from the heat source and broil for 3-4 minutes, turning halfway through, until the prosciutto becomes crispy and the asparagus is tender. For grilling: Preheat grill to medium-high heat. Grill the wrapped asparagus for 2-3 minutes per side until the prosciutto is crisp and the asparagus is tender with light grill marks.

ServeTransfer the prosciutto-wrapped asparagus to a serving platter. Sprinkle with the remaining lemon zest and the grated Parmigiano-Reggiano cheese if using. Drizzle with balsamic glaze if desired. Serve immediately while warm for the best flavor and texture.
