Instructions

  1. Prepare the polenta
In a large pot, bring water or broth to a boil. Slowly whisk in polenta and salt. Reduce heat to low and cook, stirring frequently for about 30 minutes until thick and creamy. Spread half of the polenta into a greased 9x13 inch baking dish and set aside.
  2. Make the meat sauce
Heat olive oil in a large skillet over medium heat. Add onions, carrots, and celery, cooking until softened, about 5 minutes. Add garlic and cook for 1 minute more. Add ground beef and Italian sausage, breaking up with a spoon, and cook until browned, about 8-10 minutes.
  3. Finish the sauce
Stir in tomato paste and cook for 2 minutes. Add crushed tomatoes and bring to a simmer. Reduce heat and cook uncovered for 20-25 minutes until thickened. Season with salt and pepper to taste. Stir in chopped basil.
  4. Layer the lasagna
Spread half of the meat sauce over the polenta base. Sprinkle with 1/2 cup Parmesan and 1 cup mozzarella. Pour remaining polenta over the cheese layer and spread evenly. Top with remaining meat sauce.
  5. Add final cheese layer
Sprinkle the top with remaining Parmesan and mozzarella cheeses. The cheese should completely cover the top layer of sauce.
  6. Bake the lasagna
Preheat oven to 375°F (190°C). Bake uncovered for 30-35 minutes until bubbling and the cheese is golden brown. Let stand for 10-15 minutes before serving.
