  1. Prepare the pimento cheese
    In a large mixing bowl, combine the grated cheddar cheese, softened cream cheese, and mayonnaise. Mix thoroughly until well combined and creamy. Fold in the drained pimentos, garlic powder, onion powder, cayenne pepper (if using), and Worcestershire sauce. Season with salt and black pepper to taste.
  2. Chill the mixture
    Cover the pimento cheese mixture and refrigerate for at least 30 minutes to allow the flavors to meld. This step can be done up to 3 days in advance for even better flavor development.
  3. Prepare the bread
    Lightly butter one side of each bread slice. This will be the outside of your sandwich and will help create a golden, crispy exterior when toasted.
  4. Assemble the sandwiches
    With the unbuttered sides facing up, spread a generous layer of pimento cheese (about 3-4 tablespoons) on 4 slices of bread. Add lettuce if desired, then top with the remaining bread slices, buttered side out.
  5. Toast the sandwiches
    Heat a large skillet or griddle over medium heat. Place the assembled sandwiches on the hot surface and cook for 2-3 minutes on each side, until the bread is golden brown and the cheese is warm and melty. Press down gently with a spatula during cooking to help the sandwich hold together.
  6. Serve immediately
    Remove sandwiches from the heat, cut diagonally if desired, and serve immediately while the bread is crisp and the filling is warm. Pair with dill pickles, potato chips, or a simple green salad for a complete meal.
