  1. Prepare the pasta
    Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually 10-12 minutes. Reserve 1/2 cup of pasta water before draining.
  2. Make the arrabbiata sauce
    While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped chili peppers. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add tomatoes and seasonings
    Pour in the crushed tomatoes, add the dried oregano, red pepper flakes (if using), salt, and black pepper. Stir well to combine. Bring the sauce to a simmer and cook for about 15 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Combine pasta and sauce
    Drain the pasta, reserving some pasta water. Add the drained pasta directly to the sauce in the skillet. Toss well to coat the pasta with the sauce. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Finish and serve
    Remove from heat and stir in the torn basil leaves. Taste and adjust seasoning if necessary. Serve immediately in warm bowls, topped with grated Pecorino Romano or Parmesan cheese.
