  1. Prepare the pastry dough
    In a large bowl, whisk together flour, sugar, and salt. Using a pastry cutter or your fingertips, work the cold cubed butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces. Sprinkle ice water over the mixture, 1 tablespoon at a time, and stir with a fork until the dough just begins to come together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Make the frangipane filling
    In a medium bowl, beat together the softened butter and sugar until creamy. Add the egg and almond extract, mixing until well combined. Fold in the almond flour until a smooth paste forms. Set aside.
  3. Prepare the peaches
    Wash, pit, and slice the peaches into ¼-inch thick slices. If peaches are very juicy, place them in a colander to drain excess liquid for about 10 minutes.
  4. Assemble the galette
    Preheat the oven to 375°F (190°C). On a lightly floured surface, roll the chilled dough into a 14-inch circle about ⅛-inch thick. Transfer to a parchment-lined baking sheet. Spread the frangipane filling over the dough, leaving a 2-inch border all around. Arrange the peach slices in concentric circles over the frangipane, slightly overlapping them.
  5. Form the crust
    Fold the edges of the dough up and over the filling, pleating as you go around, leaving the center open. Brush the dough with a little water and sprinkle with turbinado sugar.
  6. Bake the galette
    Bake in the preheated oven for 40-45 minutes, until the crust is golden brown and the filling is bubbly. If the crust is browning too quickly, tent loosely with aluminum foil.
  7. Apply the glaze
    While the galette is still warm, heat the apricot jam in a small saucepan or microwave until liquid. Brush the warm jam over the peaches to create a shiny glaze.
  8. Serve
    Allow the galette to cool for at least 20 minutes before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
