
Pear and Almond Galette
Rustic French pastry with sweet pears and fragrant almonds

Prepare the doughIn a large bowl, whisk together flour, 1 tablespoon sugar, and salt. Add cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until pea-sized pieces form. Gradually add ice water, 1 tablespoon at a time, mixing until dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 1 hour.

Make the almond fillingIn a medium bowl, mix together almond flour, 1/4 cup sugar, 1/4 cup sliced almonds, egg, and almond extract until well combined. Set aside.

Prepare the pearsToss the sliced pears with lemon juice to prevent browning. Set aside.

Assemble the galettePreheat oven to 375°F (190°C). On a floured surface, roll the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet. Spread the almond filling in the center, leaving a 2-inch border. Arrange pear slices in a decorative pattern over the filling, slightly overlapping them.

Form the crustFold the edges of the dough over the filling, pleating as you go around. Brush the crust with a beaten egg and sprinkle with remaining sliced almonds.

Bake the galetteBake for 40-45 minutes, until the crust is golden brown and the filling is bubbling. If the crust browns too quickly, cover the edges with foil.

Glaze and serveBrush the warm pears with heated apricot jam for a glossy finish. Allow to cool for 15 minutes before serving. Can be served warm or at room temperature with a scoop of vanilla ice cream or whipped cream if desired.
