  1. Prepare the dough
    In a large mixing bowl, combine the whole wheat flour with 1/2 teaspoon salt. Gradually add lukewarm water while kneading to form a soft, pliable dough. Add 1 tablespoon of ghee and knead for 5 more minutes until smooth. Cover with a damp cloth and let it rest for 15-20 minutes.
  2. Make the egg mixture
    In a bowl, beat the eggs with the remaining 1/2 teaspoon salt, turmeric powder, red chili powder, and garam masala until well combined. Set aside.
  3. Prepare the filling
    Heat 1 tablespoon ghee in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and green chilies, sauté until onions turn translucent. Pour in the beaten egg mixture and scramble until just cooked but still slightly moist. Stir in chopped cilantro and remove from heat.
  4. Form the parathas
    Divide the dough into 4 equal portions and roll each into a ball. On a floured surface, roll each ball into a 6-inch circle. Place 2-3 tablespoons of the egg mixture in the center of each circle, leaving about 1 inch around the edges. Carefully fold the edges over the filling, pinching to seal completely. Gently flatten the stuffed ball with your palm.
  5. Roll the stuffed parathas
    Dust the stuffed ball with flour and very gently roll it into a circle about 7-8 inches in diameter, being careful not to tear the dough or let the filling escape. If any small tears appear, pinch them closed.
  6. Cook the parathas
    Heat a tawa or flat griddle over medium-high heat. Place the rolled paratha on the hot surface. When small bubbles appear (about 30 seconds), flip it over. Apply a teaspoon of ghee or oil around the edges and over the surface. Flip again and apply ghee to the other side as well. Press gently with a spatula and cook until both sides are golden brown with crispy spots, about 2-3 minutes per side.
  7. Serve hot
    Remove from heat and keep covered in a kitchen towel to maintain softness. Repeat with remaining dough and filling. Serve hot with yogurt, pickle, or chutney of your choice.
