  2. Caramelize the onions
    Heat the butter and oil in a large skillet over medium heat. Add the onions and cook slowly, stirring occasionally, for about 20-25 minutes until they're deeply golden brown and caramelized. Don't rush this process as it builds the fundamental flavor.
  3. Create the roux
    Once the onions are caramelized, sprinkle the flour over them and stir continuously for 2 minutes to cook out the raw flour taste and create a roux that will thicken your gravy.
  4. Add liquids and seasonings
    Gradually whisk in the beef stock, ensuring there are no lumps. Add the Worcestershire sauce, balsamic vinegar, thyme, and bay leaf. Bring the mixture to a gentle simmer.
  5. Simmer and reduce
    Reduce heat to low and simmer uncovered for about 10 minutes, stirring occasionally, until the gravy has thickened to your desired consistency. The gravy will continue to thicken as it cools.
  6. Season and finish
