  1. Prepare the vegetables
    Wash and chop all vegetables according to the ingredient list. Keep the bell peppers, zucchini, artichoke hearts, and green beans separate from the onion, garlic, and tomatoes as they'll be added at different times.
  2. Sauté the aromatics
    Heat the olive oil in a large paella pan or wide shallow skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Build the base flavor
    Add the diced tomatoes, smoked paprika, and a generous pinch of salt. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and form a thick sauce (sofrito).
  4. Add rice and broth
    Stir in the rice, coating it well with the sofrito. Pour in the vegetable broth and saffron with its soaking water. Gently stir to distribute evenly, then increase heat to medium-high and bring to a boil. Once boiling, reduce heat to medium-low and simmer uncovered for 10 minutes without stirring.
  5. Incorporate the vegetables
    Arrange the bell pepper strips, zucchini, artichoke hearts, and green beans on top of the rice. Continue to cook for another 10 minutes without stirring, allowing the rice to absorb the liquid.
  6. Add the final ingredients
    Sprinkle the frozen peas over the top. Continue cooking until all liquid is absorbed and the rice is tender but still has a slight bite to it, about 5-10 more minutes. If the rice isn't fully cooked but the liquid is absorbed, add a small amount of hot water.
  7. Create the socarrat
    In the last 2 minutes, increase the heat to medium-high to create the prized crispy bottom layer known as 'socarrat'. Listen for a gentle crackling sound, but be careful not to burn the rice.
  8. Rest and serve
    Remove from heat, cover with a clean kitchen towel, and let rest for 5-10 minutes. Garnish with lemon wedges if desired and serve directly from the pan for an authentic presentation.
