  1. Prepare the tuna mixture
    In a medium bowl, combine the drained tuna, mayonnaise, Greek yogurt, red onion, kalamata olives, capers, lemon juice, dried oregano, and lemon zest. Mix gently until well combined, breaking up any large chunks of tuna.
  2. Toast the bread
    Brush one side of each bread slice with olive oil. Place bread oil-side down on a baking sheet. Toast under the broiler for about 2 minutes until lightly golden, then remove from the oven.
  3. Assemble the sandwiches
    Spread the tuna mixture evenly over the untoasted sides of 4 bread slices. Top each with tomato slices, spinach or arugula, and crumbled feta cheese. Place the remaining bread slices on top, with the toasted side facing outward.
  4. Grill the sandwiches
    Heat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese begins to melt.
  5. Serve immediately
    Cut the sandwiches in half diagonally and serve hot while the bread is crisp and the filling is warm. Garnish with additional fresh herbs if desired.
