Instructions

  1. Prepare the tzatziki spread
In a small bowl, combine the Greek yogurt, half the lemon juice, half the minced garlic, 1 teaspoon of dried oregano, and a pinch of salt and pepper. Mix well and set aside to let the flavors develop.
  2. Make the Greek salad mixture
In a large bowl, combine the chopped romaine, diced cucumber, diced tomatoes, sliced red onion, and halved kalamata olives. Toss gently to combine.
  3. Create the dressing
In a small bowl, whisk together the olive oil, remaining lemon juice, remaining garlic, 1 teaspoon oregano, salt, and pepper. Pour over the salad mixture and toss gently to coat all ingredients evenly.
  4. Warm the wraps
Heat a large skillet over medium heat. Warm each tortilla or flatbread for about 30 seconds per side until soft and pliable. Alternatively, microwave them between damp paper towels for 15-20 seconds.
  5. Assemble the wraps
Spread a generous layer of the tzatziki mixture on each wrap, leaving a 1-inch border around the edges. Spoon the Greek salad mixture in the center of each wrap, then sprinkle with crumbled feta cheese.
  6. Roll and serve
Fold in the sides of each wrap, then roll up tightly from the bottom, tucking in the sides as you go. Cut each wrap in half diagonally and serve immediately, or wrap in parchment paper for a portable meal.
