Prepare the pita basesPreheat the oven to 400°F (200°C). Place the pita breads on a baking sheet and lightly toast them in the oven for 2-3 minutes until they start to crisp slightly but remain soft enough to fold.
-
Add the base layerRemove the pitas from the oven and spread each with approximately 2 tablespoons of hummus, leaving a small border around the edge.
-
Add toppingsDistribute the cherry tomatoes, feta cheese, kalamata olives, red onion, and cucumber evenly over the hummus layer on each pita. Sprinkle with za'atar spice blend.
-
Bake the pizzasReturn the pitas to the oven and bake for 5-7 minutes until the edges are golden brown and the toppings are warmed through. The feta cheese should be slightly softened but not completely melted.
-

-
ServeCut each pita pizza into quarters and serve immediately while still warm. For an authentic Mediterranean experience, serve with additional lemon wedges on the side.
