  1. Prepare the pita bases
    Preheat the oven to 400°F (200°C). Place the pita breads on a baking sheet and lightly toast them in the oven for 2-3 minutes until they start to crisp slightly but remain soft enough to fold.
  2. Add the base layer
    Remove the pitas from the oven and spread each with approximately 2 tablespoons of hummus, leaving a small border around the edge.
  3. Add toppings
    Distribute the cherry tomatoes, feta cheese, kalamata olives, red onion, and cucumber evenly over the hummus layer on each pita. Sprinkle with za'atar spice blend.
  4. Bake the pizzas
    Return the pitas to the oven and bake for 5-7 minutes until the edges are golden brown and the toppings are warmed through. The feta cheese should be slightly softened but not completely melted.
  5. Add finishing touches
    Remove the pita pizzas from the oven. Drizzle each with olive oil and fresh lemon juice. Sprinkle with fresh mint and parsley.
  6. Serve
    Cut each pita pizza into quarters and serve immediately while still warm. For an authentic Mediterranean experience, serve with additional lemon wedges on the side.
