Prepare the ovenPreheat your oven to 400°F (200°C). Lightly oil a baking dish large enough to hold the fish fillets in a single layer.

Season the codPat the cod fillets dry with paper towels. Season both sides with salt and pepper, then place them in the prepared baking dish.

Make the Mediterranean sauceIn a small bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, and red pepper flakes (if using). Whisk until well blended.

Add the vegetablesScatter the cherry tomatoes, Kalamata olives, and capers around and on top of the fish. Pour the olive oil mixture evenly over the fish and vegetables, ensuring the fish is well coated.

Add lemon slicesArrange the lemon slices on top of the fish fillets and sprinkle with fresh parsley.

Bake the fishBake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is opaque throughout. The internal temperature should reach 145°F (63°C).

ServeRemove from the oven and let rest for 5 minutes. Garnish with additional fresh parsley and serve hot with the sauce and vegetables spooned over the top.
