  1. Prepare the oven
    Preheat your oven to 400°F (200°C). Lightly oil a baking dish large enough to hold the fish fillets in a single layer.
  2. Season the cod
    Pat the cod fillets dry with paper towels. Season both sides with salt and pepper, then place them in the prepared baking dish.
  3. Make the Mediterranean sauce
    In a small bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, and red pepper flakes (if using). Whisk until well blended.
  4. Add the vegetables
    Scatter the cherry tomatoes, Kalamata olives, and capers around and on top of the fish. Pour the olive oil mixture evenly over the fish and vegetables, ensuring the fish is well coated.
  5. Add lemon slices
    Arrange the lemon slices on top of the fish fillets and sprinkle with fresh parsley.
  6. Bake the fish
    Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is opaque throughout. The internal temperature should reach 145°F (63°C).
  7. Serve
    Remove from the oven and let rest for 5 minutes. Garnish with additional fresh parsley and serve hot with the sauce and vegetables spooned over the top.
