  1. Prepare the maple Dijon glaze
    In a small bowl, whisk together the maple syrup, Dijon mustard, whole grain mustard, 1 tablespoon olive oil, minced garlic, thyme leaves, and apple cider vinegar until well combined. Set aside.
  2. Season the pork chops
    Pat the pork chops dry with paper towels. Season both sides generously with kosher salt and black pepper. If using, sprinkle the red pepper flakes evenly over both sides.
  3. Sear the pork chops
    Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. When the oil is shimmering, add the pork chops and sear for 3-4 minutes on each side until golden brown.
  4. Add the glaze
    Reduce heat to medium-low. Pour the maple Dijon glaze over the pork chops, turning them to coat evenly. Continue cooking for 5-7 minutes, occasionally spooning the glaze over the chops, until the internal temperature reaches 145°F (63°C) and the glaze has thickened.
  5. Rest and serve
    Transfer the pork chops to a plate and let rest for 5 minutes. Spoon any remaining glaze from the pan over the chops before serving. Garnish with additional fresh thyme if desired.
