
Maple Dijon Pork Chops
Sweet and tangy glazed pork chops with a hint of mustard

Prepare the maple Dijon glazeIn a small bowl, whisk together the maple syrup, Dijon mustard, whole grain mustard, 1 tablespoon olive oil, minced garlic, thyme leaves, and apple cider vinegar until well combined. Set aside.

Season the pork chopsPat the pork chops dry with paper towels. Season both sides generously with kosher salt and black pepper. If using, sprinkle the red pepper flakes evenly over both sides.

Sear the pork chopsHeat the remaining tablespoon of olive oil in a large skillet over medium-high heat. When the oil is shimmering, add the pork chops and sear for 3-4 minutes on each side until golden brown.

Add the glazeReduce heat to medium-low. Pour the maple Dijon glaze over the pork chops, turning them to coat evenly. Continue cooking for 5-7 minutes, occasionally spooning the glaze over the chops, until the internal temperature reaches 145°F (63°C) and the glaze has thickened.

Rest and serveTransfer the pork chops to a plate and let rest for 5 minutes. Spoon any remaining glaze from the pan over the chops before serving. Garnish with additional fresh thyme if desired.
