  1. Prepare the Brussels sprouts
    Preheat oven to 425°F (220°C). Trim the stems from the Brussels sprouts and remove any discolored outer leaves. Cut each sprout in half lengthwise. Place them in a large bowl, toss with 2 tablespoons olive oil, salt, and pepper until evenly coated.
  2. Roast the Brussels sprouts
    Spread the Brussels sprouts in a single layer on a large rimmed baking sheet, cut side down. Roast for 20-25 minutes, stirring halfway through, until they are golden brown and crisp on the outside and tender on the inside.
  3. Prepare the maple Dijon glaze
    While the Brussels sprouts are roasting, combine the remaining 1 tablespoon olive oil, maple syrup, Dijon mustard, whole grain mustard, minced garlic, apple cider vinegar, and red pepper flakes (if using) in a small bowl. Whisk until smooth and well combined.
  4. Glaze the Brussels sprouts
    When the Brussels sprouts are finished roasting, transfer them to a large bowl. Pour the maple Dijon glaze over the hot Brussels sprouts and toss gently until they are evenly coated.
  5. Add toppings and serve
    Transfer the glazed Brussels sprouts to a serving dish. Sprinkle with crumbled bacon (if using) and toasted pecans. Serve immediately while still warm for the best flavor and texture.
