
Mango Chicken Stir Fry
Sweet and savory chicken with fresh mango in a tangy sauce

Prepare the sauceIn a small bowl, whisk together the soy sauce, rice vinegar, sweet chili sauce, honey, and lime juice until well combined. Set aside.

Cook the chickenHeat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook for 6-7 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.

Sauté the aromaticsAdd the remaining 1 tablespoon of oil to the same pan. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant, being careful not to burn.

Cook the vegetablesAdd the red and yellow bell peppers to the pan and stir-fry for 2 minutes. Add the snow peas and continue cooking for another minute until vegetables are crisp-tender.

Combine all ingredientsReturn the cooked chicken to the pan. Add the diced mango and pour the prepared sauce over everything. Gently toss to coat all ingredients with the sauce and cook for 2-3 minutes until everything is heated through and the sauce has slightly thickened.

Add fresh herbsTurn off the heat and stir in the chopped cilantro and green onions, reserving some for garnish.

ServeTransfer the stir-fry to a serving platter or individual plates. Garnish with the reserved cilantro and green onions. Serve immediately with steamed jasmine rice or rice noodles.
