  1. Prepare the papaya
    Peel the green papaya and remove the seeds. Using a shredder or julienne peeler, shred the papaya into thin strips. Soak in cold water for 5 minutes, then drain well and pat dry.
  2. Make the dressing
    In a mortar and pestle, pound the garlic and chilies until they form a rough paste. Add the palm sugar and continue pounding until dissolved. Stir in the fish sauce, lime juice, and tamarind paste (if using) until well combined.
  3. Combine ingredients
    In a large bowl, add the shredded papaya, tomatoes, and long beans. If using dried shrimp, add them now. Pour the dressing over the ingredients.
  4. Pound or mix the salad
    Traditionally, the salad is lightly pounded to bruise the papaya and help it absorb the flavors. You can do this with a wooden spoon or, if you have one, transfer everything to a large mortar and gently pound a few times.
  5. Serve and garnish
    Transfer the salad to a serving plate. Sprinkle with crushed peanuts. Serve immediately while fresh and crisp, alongside sticky rice for an authentic Thai experience.
