Green Papaya Salad
Spicy, tangy Thai salad with shredded unripe papaya
Ingredients
Instructions
-
Prepare the papayaPeel the green papaya and remove the seeds. Using a shredder or julienne peeler, shred the papaya into thin strips. Soak in cold water for 5 minutes, then drain well and pat dry.
-
Make the dressingIn a mortar and pestle, pound the garlic and chilies until they form a rough paste. Add the palm sugar and continue pounding until dissolved. Stir in the fish sauce, lime juice, and tamarind paste (if using) until well combined.
-
Combine ingredientsIn a large bowl, add the shredded papaya, tomatoes, and long beans. If using dried shrimp, add them now. Pour the dressing over the ingredients.
-
Pound or mix the saladTraditionally, the salad is lightly pounded to bruise the papaya and help it absorb the flavors. You can do this with a wooden spoon or, if you have one, transfer everything to a large mortar and gently pound a few times.
-
Serve and garnishTransfer the salad to a serving plate. Sprinkle with crushed peanuts. Serve immediately while fresh and crisp, alongside sticky rice for an authentic Thai experience.
