Prepare the dry ingredientsIn a large mixing bowl, combine the flour, sugar, cardamom, cinnamon, cloves, baking powder, and salt. Whisk together until well blended.

Mix the wet ingredientsIn a separate bowl, combine the coconut milk, beaten egg, melted butter, and vanilla extract. Stir until well incorporated.

Form the doughMake a well in the center of the dry ingredients and pour in the wet mixture. Mix gradually, pulling in the flour from the sides until a soft dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

Rest the doughCover the dough with a damp cloth or plastic wrap and let it rest for 15-20 minutes at room temperature. This allows the gluten to relax and the flavors to develop.

Shape the mandaziOn a lightly floured surface, roll out the dough to about 1/2 inch thickness. Using a knife or pizza cutter, cut the dough into triangles or squares (about 3 inches each side).

Heat the oilIn a deep pan or pot, heat the vegetable oil to 350°F (175°C). Test the oil by dropping a small piece of dough in - it should sizzle and rise to the surface immediately.

Fry the mandaziCarefully drop the mandazi pieces into the hot oil, a few at a time to avoid overcrowding. Fry until golden brown on both sides, about 2-3 minutes per side. Use a slotted spoon to flip them over and ensure even cooking.

Drain and serveRemove the fried mandazi with a slotted spoon and place them on paper towels to drain excess oil. Serve warm, either plain or dusted with powdered sugar. They can be enjoyed with tea, coffee, or as a snack on their own.
