Prepare the doughIn a large mixing bowl, combine the whole wheat flour and salt. Add the oil and mix with your fingertips until the mixture resembles coarse crumbs. Gradually add warm water while kneading until a soft, pliable dough forms. It should be slightly sticky but not wet.

Rest the doughCover the dough with a damp cloth or plastic wrap and let it rest for at least 15 minutes or up to 30 minutes. This allows the gluten to relax, making the chapatis soft and easier to roll.

Divide and shapeDivide the dough into 8 equal portions and roll each portion between your palms to form smooth balls. Flatten each ball slightly with your palm. Keep the dough balls covered with a damp cloth while working with individual pieces.

Roll the chapatisDust your work surface with a little all-purpose flour. Take one dough ball, flatten it with your palm, and roll it into a thin, round disc about 6-7 inches in diameter using a rolling pin. The chapati should be thin but not so thin that it tears easily.

Cook on the skilletHeat a tawa (flat skillet) or non-stick pan over medium-high heat. When hot, place the rolled chapati on the skillet. Cook for about 30 seconds until small bubbles start to appear on the surface.

Flip and cookFlip the chapati and cook the other side for about 30 seconds. You should see small brown spots beginning to form. Flip it again, and this time gently press the edges with a clean kitchen towel or spatula, moving in a circular motion. The chapati should puff up.

Finish cookingRemove the chapati from the skillet and place it directly on the flame for a few seconds if you want it to puff up more (optional, and only if you have a gas stove). Be careful not to burn it. Alternatively, you can continue cooking on the skillet until both sides have light brown spots.

Keep warm and serveRemove the chapati and brush with ghee or butter if desired. Place in a covered container lined with a kitchen towel to keep warm while you make the remaining chapatis. Serve warm with your favorite curry, dal, or vegetable dish.
