  1. Prepare the root vegetables
    Peel and cut the orange and purple sweet potatoes and taro root into 1-inch cubes. Place each type in separate bowls of cold water to prevent discoloration while you prepare the other ingredients.
  2. Cook the root vegetables
    Bring a pot of water to a boil. Add the orange sweet potatoes first and cook for 5 minutes. Then add the purple sweet potatoes and cook for another 3 minutes. Finally, add the taro and cook for 4-5 minutes more until all vegetables are tender but still hold their shape. Drain and set aside.
  3. Prepare the tapioca pearls
    Bring 4 cups of water to a boil in a separate pot. Add the tapioca pearls and cook according to package instructions, usually about 10-15 minutes until translucent. Drain and rinse under cold water to prevent sticking. Set aside.
  4. Cook the sago pearls
    In another pot, bring 4 cups of water to a boil. Add the sago pearls and cook until translucent, about 10 minutes, stirring occasionally to prevent sticking. Drain and rinse under cold water. Set aside.
  5. Prepare the coconut broth
    In a large pot, combine the coconut milk, water, palm sugar, salt, and knotted pandan leaves. Bring to a gentle simmer over medium heat, stirring until the sugar has dissolved. Do not let it boil vigorously as the coconut milk may curdle. Simmer for about 5 minutes to infuse the flavors.
  6. Combine all ingredients
    Remove the pandan leaves from the coconut broth. Add the cooked sweet potatoes, taro, tapioca pearls, and sago pearls to the coconut broth. Gently stir to combine. If using, add the sliced banana and black glutinous rice. Simmer for another 2-3 minutes to allow the flavors to meld together.
  7. Serve the dessert
    Ladle the bubur cha cha into serving bowls. This dessert can be served warm, at room temperature, or chilled according to preference. For a chilled version, allow it to cool completely before refrigerating for at least 2 hours.
