  1. Prepare the rice
    Rinse the soaked black glutinous rice thoroughly until the water runs clear. Place in a large pot with 4 cups of water and the pandan leaf if using. Bring to a boil, then reduce heat to a simmer.
  2. Cook the rice
    Simmer the rice uncovered for about 30-35 minutes, stirring occasionally to prevent sticking, until the rice is tender and has a porridge-like consistency. Add more water if needed during cooking if the mixture becomes too thick.
  3. Add sweeteners and flavoring
    When the rice is tender, stir in the palm sugar and salt until completely dissolved. Continue to simmer for another 5 minutes, allowing the flavors to meld together.
  4. Add coconut milk
    Remove the pot from heat and stir in 3/4 cup of the coconut milk and vanilla extract. Reserve the remaining coconut milk for serving. The pudding will continue to thicken as it cools.
  5. Rest and serve
    Allow the pudding to rest for 10 minutes. Serve warm in individual bowls, drizzled with the remaining coconut milk. Garnish with fresh tropical fruits, toasted sesame seeds or crushed peanuts, and mint leaves if desired.
