
Thai Coconut Sticky Rice with Durian
Sweet glutinous rice infused with coconut milk and tropical durian

Prepare the riceDrain the soaked glutinous rice thoroughly. Line a steamer with cheesecloth or a clean kitchen towel. Add the rice and steam over medium-high heat for about 20 minutes until the rice is translucent and fully cooked.

Make coconut sauceWhile the rice is cooking, combine 1 cup of coconut milk, 1/2 cup sugar, and salt in a saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat but keep warm.

Season the riceTransfer the cooked sticky rice to a large bowl. Gradually pour the warm coconut milk mixture over the rice, gently folding until all the liquid is absorbed. Cover with a damp cloth and let it rest for 15 minutes to allow the flavors to meld.

Prepare the durianPlace the durian flesh in a bowl and gently mash it with a fork until smooth but still slightly chunky. Set aside.

Make durian sauceIn a small saucepan, combine the remaining 1/2 cup coconut milk, 1/4 cup sugar, and the optional pandan leaves. Bring to a gentle simmer over medium-low heat. Add the cornstarch mixture and stir until the sauce thickens slightly. Remove from heat and discard the pandan leaves if used.

Combine with durianFold the mashed durian into the coconut sticky rice, ensuring it's evenly distributed throughout. Alternatively, you can serve the durian separately and allow each person to add their desired amount.

ServePortion the durian sticky rice onto serving plates. Drizzle each serving with the coconut sauce, sprinkle with toasted sesame seeds, and garnish with fresh mint leaves if desired. Serve immediately while still warm.
