
Longjing Dragon Well Tea

Prepare the waterHeat filtered water to 80°C (175°F). Longjing tea is delicate, and using water that's too hot will result in a bitter taste. If you don't have a thermometer, bring water to a boil, then let it cool for about 2 minutes.

Warm the teapotPour a small amount of the heated water into your teapot or gaiwan and swirl it around to warm the vessel. Discard this water. This step helps maintain the brewing temperature and enhances the aroma of the tea.

Add the tea leavesPlace the Longjing tea leaves into the warmed teapot. Notice the flat, sword-like shape of the leaves, which is characteristic of authentic Longjing tea. For a stronger brew, add an extra teaspoon of leaves.

First infusionPour the 80°C water over the tea leaves. Allow the tea to steep for approximately 1-2 minutes for the first infusion. Observe how the leaves dance and slowly unfurl in the water, a signature of high-quality Longjing tea.

Serve the teaPour the tea into small clear cups, distributing it evenly to ensure consistent flavor in each cup. The tea should have a pale yellowish-green color and a fresh, nutty aroma. Serve immediately to enjoy the optimal flavor.

Additional infusionsLongjing tea leaves can be infused multiple times. For subsequent infusions, add hot water to the same leaves and steep for progressively longer periods (add 30 seconds for each additional infusion). Good quality Longjing can withstand 2-3 infusions while maintaining its distinctive flavor.
