  1. Prepare the couscous
    Place the couscous in a large bowl. Pour the hot vegetable broth over the couscous, stir once, then cover with a plate or plastic wrap. Let it sit for 5 minutes until all the liquid is absorbed. Fluff with a fork to separate the grains.
  2. Make the dressing
    In a small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper until well combined. Set aside.
  3. Combine vegetables and herbs
    Add the diced cucumber, halved cherry tomatoes, diced bell pepper, red onion, and sliced olives to the fluffed couscous. Mix gently to combine. Add the chopped parsley, mint, and dill, stirring gently to distribute the herbs throughout the salad.
  4. Dress the salad
    Pour the prepared lemon dressing over the couscous mixture. Toss gently but thoroughly to ensure all ingredients are coated with the dressing. Taste and adjust seasoning if necessary.
  5. Add the finishing touch
    Gently fold in the crumbled feta cheese, reserving a small amount for garnish if desired. Be careful not to overmix as this can break down the feta too much.
  6. Chill and serve
    Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, give it a gentle toss, taste again for seasoning, and adjust if needed. Serve chilled or at room temperature, garnished with any reserved feta and a few fresh herb leaves.
