  1. Prepare the marinade
    In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, oregano, salt, pepper, and red pepper flakes if using. Whisk thoroughly until well combined.
  2. Marinate the chicken
    Add the chicken breasts to the marinade, turning to coat completely. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor (if you have the time).
  3. Preheat and prepare
    Preheat oven to 375°F (190°C). Remove the chicken from the refrigerator and let it come to room temperature for about 15 minutes while the oven heats.
  4. Sear the chicken
    Heat a large oven-safe skillet over medium-high heat. Remove chicken from marinade (reserve the marinade) and sear for 3-4 minutes per side until golden brown.
  5. Create the sauce
    Pour the reserved marinade, chicken broth, and honey into the skillet around the chicken. Bring to a simmer for 1 minute.
  6. Finish in the oven
    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  7. Rest and serve
    Remove from the oven and let the chicken rest for 5 minutes. Spoon the pan sauce over the chicken before serving, and garnish with additional fresh herbs and lemon slices if desired.
