Instructions

  1. Cook the pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Prepare the shrimp
While the pasta is cooking, pat the shrimp dry with paper towels. Season with salt and pepper. In a large skillet over medium-high heat, add 2 tablespoons olive oil and 2 tablespoons butter. When butter is melted, add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove to a plate and set aside.
  3. Make the sauce
In the same skillet, add the remaining 2 tablespoons olive oil and 2 tablespoons butter. Add minced garlic and red pepper flakes (if using) and sauté for 30 seconds until fragrant. Pour in the white wine and simmer for 2-3 minutes until slightly reduced. Add lemon zest and juice, stirring to combine.
  4. Combine pasta and sauce
Add the drained pasta to the skillet with the sauce. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce. Return the cooked shrimp to the skillet and gently mix to combine.
  5. Finish and serve
Remove from heat and stir in the chopped parsley and Parmesan cheese. Taste and adjust seasonings with salt and pepper as needed. Serve immediately with additional grated Parmesan cheese and lemon wedges on the side.
