Prepare the fishPat the fish fillets dry with paper towels. Season both sides with salt, pepper, and paprika. Let the fish sit at room temperature for 5 minutes to absorb the seasonings.

Heat the panHeat olive oil in a large skillet over medium-high heat until shimmering but not smoking. Make sure your pan is large enough to fit all fillets without overcrowding.

Cook the fishCarefully place the seasoned fillets in the hot pan. Cook for 3-4 minutes without moving them, until the bottom is golden brown and crispy. Gently flip and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork.

Make the lemon butter sauceRemove the fish from the pan and set aside on a warm plate. Reduce heat to medium-low, add butter to the same pan and let it melt. Add minced garlic and cook for 30 seconds until fragrant. Stir in lemon juice, lemon zest, and capers if using. Simmer for 1-2 minutes until slightly thickened.

Finish and serveReturn the fish to the pan, spooning the sauce over the fillets. Sprinkle with fresh parsley and thyme. Remove from heat after 1 minute. Transfer to serving plates, drizzle with more sauce, and garnish with lemon slices. Serve immediately.
