  1. Prepare the meat mixture
    In a large bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped parsley, and mint. Add all the spices (cumin, coriander, cinnamon, allspice, cayenne, salt, and pepper). Mix thoroughly with your hands until all ingredients are well incorporated.
  2. Shape the kofta
    Take a handful of the lamb mixture (about 2-3 tablespoons) and shape it into an oblong sausage shape around the soaked wooden skewer. Press firmly to ensure the meat adheres to the skewer. Repeat with remaining mixture, making about 8-10 kofta skewers.
  3. Chill the skewers
    Place the prepared kofta skewers on a tray and refrigerate for at least 30 minutes (or up to 4 hours). This helps the meat firm up and hold its shape during cooking.
  4. Preheat the grill
    Preheat your grill to medium-high heat (around 375-400°F or 190-200°C). If using a grill pan, heat it over medium-high heat until hot.
  5. Grill the kofta
    Place the kofta skewers on the preheated grill or grill pan. Cook for about 4-5 minutes per side, turning occasionally until they are browned on all sides and cooked through. The internal temperature should reach 160°F (71°C).
  6. Rest and serve
    Remove the kofta from the grill and let them rest for 5 minutes. Serve hot with warm pita bread, tzatziki sauce, hummus, tabbouleh, or a simple salad of tomatoes, cucumbers, and red onions drizzled with olive oil and lemon juice.
