
Korean Beef Soup
Rich, hearty broth with tender beef and aromatic vegetables

Prepare the beefRinse the beef chunks and bones under cold running water to remove any bone fragments or impurities. Place in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain and rinse the meat and bones again to remove any scum.

Make the brothReturn the cleaned meat and bones to the pot. Add 8 cups of water, quartered onion, whole garlic cloves, ginger slices, and 2 whole green onions. Bring to a boil, then reduce heat to low. Simmer gently, partially covered, for about 3 hours, until the broth turns milky white and the meat is very tender.

Strain and season the soupRemove the meat from the broth and set aside. Strain the broth through a fine-mesh sieve, discarding the solids. Return the strained broth to the pot. Season with soy sauce, sesame oil, fish sauce (if using), salt, and white pepper to taste.

Prepare the meat and vegetablesShred or thinly slice the cooked beef. If using daikon radish, add it to the broth and simmer for about 15 minutes until tender. Return the shredded beef to the pot and heat through.

Serve the soupLadle the hot soup into bowls. Place a scoop of cooked white rice in each bowl. Garnish with chopped green onions. Serve immediately with additional side dishes like kimchi if desired.
