
Korean Beef Bulgogi Bowls

Prepare the marinadeIn a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear, sliced green onions, and toasted sesame seeds. Stir until sugar is dissolved.

Marinate the beefAdd the thinly sliced beef to the marinade, making sure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor penetration.

Prepare the vegetablesWhile the beef is marinating, prepare the vegetables. Blanch the spinach by briefly dipping it in boiling water, then immediately transferring to ice water. Drain well and lightly season with salt. Julienne the carrots and slice the cucumbers thinly.

Cook the beefHeat a large skillet over high heat. When the pan is very hot, add the marinated beef in a single layer (you may need to cook in batches). Cook for 2-3 minutes, stirring occasionally, until the beef is caramelized and just cooked through. Remove from heat.

Assemble the bowlsDivide the cooked rice among four serving bowls. Arrange the cooked bulgogi beef over the rice. Place the prepared vegetables (spinach, carrots, and cucumber) around the beef in separate sections.

Add the finishing touchesDrizzle each bowl with a tablespoon of gochujang sauce. Sprinkle with additional sliced green onions and toasted sesame seeds. Serve immediately while hot.
