Prepare the marinadeIn a large bowl, whisk together the gochujang, soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and rice vinegar until well combined to create your Korean BBQ marinade.

Marinate the porkAdd the pork to the marinade, making sure all pieces are well coated. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours for best flavor development.

Cook the porkHeat a large skillet or grill pan over medium-high heat. Cook the marinated pork in batches to avoid overcrowding, about 3-4 minutes per side until caramelized and cooked through. If using sliced pork shoulder, you may need to cook longer until tender. Transfer to a cutting board and let rest for 5 minutes before roughly chopping or shredding.

Prepare the vegetablesWhile the pork is cooking, prepare your vegetables. Drain and chop the kimchi, slice the cucumber, julienne the carrots, and mix the sriracha with mayonnaise for your spicy mayo sauce.

Toast the bunsLightly butter the cut sides of the slider buns and toast them in a clean skillet or under a broiler until golden brown, about 1-2 minutes. Watch carefully to prevent burning.

Assemble the slidersSpread a thin layer of sriracha mayo on the bottom bun. Add a generous portion of the Korean BBQ pork, followed by a small amount of kimchi, cucumber slices, and julienned carrots.

Finish and serveSprinkle sliced green onions and toasted sesame seeds over the fillings. Place the top bun on and secure with a toothpick if needed. Serve immediately while warm with extra kimchi on the side if desired.
