  1. Prepare the teriyaki sauce
    In a small bowl, whisk together soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger until the sugar is dissolved. Set aside.
  2. Sauté the onions
    Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the sliced onions and cook for 5-7 minutes until soft and translucent, stirring occasionally. Transfer to a plate and set aside.
  3. Cook the beef
    In the same skillet, add the remaining 2 tablespoons of oil and increase heat to medium-high. Add the thinly sliced beef and cook for 2-3 minutes until the beef is no longer pink, stirring frequently.
  4. Combine and simmer
    Return the sautéed onions to the skillet with the beef. Pour the teriyaki sauce over the beef and onions. Bring to a simmer and cook for 5-7 minutes until the sauce has reduced and thickened slightly, coating the beef nicely.
  5. Assemble the bowls
    Divide the cooked rice among four serving bowls. Top each bowl with an equal portion of the teriyaki beef and onion mixture, making sure to spoon some of the sauce over each serving.
  6. Garnish and serve
    Sprinkle the sliced green onions and toasted sesame seeds over each bowl. Serve immediately with pickled ginger on the side if desired.
