
Jamaican Beef Patties

Make the pastry doughIn a large bowl, combine flour, salt, and 1 teaspoon curry powder. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the fillingIn a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Add onion, garlic, and Scotch bonnet pepper, cooking until vegetables soften, about 5 minutes. Stir in the remaining curry powder, thyme, and allspice.

Finish the fillingPour in the beef broth and simmer for 10 minutes until most of the liquid has evaporated. Stir in breadcrumbs to absorb any remaining liquid. Remove from heat and let cool for 15 minutes.

Assemble the pattiesPreheat oven to 375°F (190°C). On a floured surface, roll out the dough to 1/8 inch thickness. Cut into 6-inch circles using a bowl or plate as a guide. Place 2-3 tablespoons of filling on one half of each circle, leaving a 1/2-inch border.

Seal and prepare for bakingMix the egg with 1 tablespoon water to create an egg wash. Brush the edges of the dough circles with egg wash. Fold the empty half over the filling to create a half-moon shape. Press edges with a fork to seal. Cut a small vent on top of each patty.

Bake to golden perfectionPlace patties on a parchment-lined baking sheet. Brush tops with remaining egg wash and bake for 25-30 minutes until golden brown and flaky. Let cool for 5 minutes before serving.
