
Indian Vegetable Biryani
Fragrant basmati rice with spiced vegetables and aromatic herbs

Prepare the riceDrain the soaked basmati rice. In a large pot, bring 4 cups of water to a boil. Add the rice, 1 teaspoon of salt, and a few whole spices (cardamom, cloves, cinnamon) if available. Cook until rice is 70% done (about 5-6 minutes). Drain and set aside.

Sauté the onionsHeat 2 tablespoons of ghee in a large, heavy-bottomed pan over medium heat. Add the sliced onions and sauté until they turn golden brown, about 8-10 minutes. Remove half of the fried onions and set aside for garnish.

Cook the vegetablesTo the remaining onions, add cumin seeds and let them splutter. Add ginger-garlic paste and green chilies, sauté for 1 minute until fragrant. Add turmeric powder and mix well. Add the potatoes, carrots, and cauliflower. Cook for 5 minutes, then add green beans and peas. Cook for another 5-7 minutes until vegetables are partially cooked.

Assemble the biryaniIn a large, heavy-bottomed pot with a tight-fitting lid, add a layer of the partially cooked vegetables. Sprinkle some garam masala, fresh mint, and coriander leaves. Add a layer of the par-boiled rice. Repeat the layers, finishing with rice on top.

Add the final touchesDrizzle the remaining tablespoon of ghee over the top layer of rice. Sprinkle the reserved fried onions, remaining mint and coriander leaves. Cover the pot with a tight-fitting lid. You can place a damp cloth between the pot and lid to seal in the steam.

Cook with dum (steam)Place the pot on low heat and cook for 20-25 minutes. This slow cooking process, known as 'dum', allows the flavors to meld together and the rice to finish cooking in the steam. Do not open the lid during this time.

Rest and serveOnce done, remove from heat and let it rest, still covered, for 10 minutes. Then gently fluff the biryani with a fork, mixing the layers slightly. Serve hot with raita (yogurt sauce) and papadums if desired.
