  1. Marinate the meat
    In a large bowl, combine the meat with yogurt, half of the ginger-garlic paste, half of the chopped mint and coriander, turmeric, red chili powder, and salt. Mix well, cover, and refrigerate for at least 30 minutes, preferably 2 hours.
  2. Prepare the rice
    Drain the soaked rice. In a large pot, bring 2 liters of water to a boil. Add half of the whole spices, 1 tablespoon of salt, and the drained rice. Cook until the rice is 70% done (about 5-7 minutes). Drain and set aside.
  3. Fry the onions
    Heat 2 tablespoons of ghee in a large, heavy-bottomed pan. Add the sliced onions and fry until golden brown and crispy. Remove half of the fried onions and set aside for garnish.
  4. Cook the meat
    In the same pan with remaining fried onions, add the remaining whole spices and ginger-garlic paste. Sauté for 2 minutes until fragrant. Add the marinated meat and cook on medium-high heat for 10 minutes, stirring occasionally. Then reduce heat, cover, and simmer until the meat is tender, about 30-40 minutes for lamb or 20 minutes for chicken.
  5. Layer the biryani
    In a heavy-bottomed pot with a tight-fitting lid (a Dutch oven works well), place half of the meat mixture as the bottom layer. Sprinkle half of the remaining mint and coriander leaves. Add a layer of half the partially cooked rice. Drizzle half of the saffron milk, rose water, and kewra water. Repeat with the remaining meat, herbs, and rice, finishing with the rice on top.
  6. Prepare for dum cooking
    Drizzle the remaining saffron milk, rose water, kewra water, and ghee over the top layer. Sprinkle the reserved fried onions. Seal the pot with aluminum foil and place the lid firmly on top. This creates the 'dum' (pressure) environment essential for Lucknowi Biryani.
  7. Slow cook on 'dum'
    Place the pot on very low heat and cook for 30-35 minutes. Alternatively, you can place the pot in a preheated oven at 150°C (300°F) for the same duration. This slow cooking process allows the flavors to meld and the aromatics to infuse the rice and meat.
  8. Serve the biryani
    Once done, let the biryani rest for 10 minutes. Gently mix the layers from top to bottom before serving. Serve hot with raita (yogurt dip), mirchi ka salan (chili curry), or a simple salad.
