  1. Marinate the beef
    In a large bowl, combine the beef cubes with vinegar, half of the minced garlic, half of the minced ginger, 1 tablespoon of the chili powder, 1 teaspoon cumin, 1 teaspoon coriander, and 1/2 teaspoon turmeric. Mix well to coat the meat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Prepare the aromatics
    Heat oil in a large, heavy-bottomed pot over medium heat. Add mustard seeds and allow them to pop, about 30 seconds. Add the cinnamon stick and cardamom pods, stirring for another 30 seconds until fragrant. Add the chopped onions and sauté until they turn golden brown, about 8-10 minutes.
  3. Build the curry base
    Add the remaining garlic and ginger to the pot and sauté for 2 minutes until fragrant. Add the remaining spices (chili powder, cumin, coriander, and turmeric) and stir continuously for 1 minute to prevent burning. If the mixture seems too dry, add a splash of water.
  4. Cook the beef
    Add the marinated beef with all its marinade to the pot and stir to coat with the spice mixture. Cook for about 5 minutes, stirring occasionally, until the beef is seared on all sides.
  5. Simmer the curry
    Pour in the water or beef broth, bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour 30 minutes, or until the beef is tender and can be easily pulled apart with a fork. Stir occasionally and add more water if needed to maintain a thick gravy consistency.
  6. Adjust seasoning
    Once the beef is tender, remove the lid and increase heat to medium. Allow the curry to reduce and thicken slightly, about 10-15 minutes. Taste and adjust seasoning with salt as needed. For an authentic vindaloo, the flavor should be tangy, spicy, and deeply savory.
  7. Rest and serve
    Remove from heat and let the vindaloo rest for 10 minutes before serving. This allows the flavors to meld together. Remove the cinnamon stick and cardamom pods if desired. Serve hot with steamed basmati rice, naan bread, or both.
